Strawberry Bellini


  • 7 oz strawberries about 1/2 a pint of strawberries
  • 1 bottle Prosecco wine chilled
  • 2-3 tbsp simple syrup or less depending the strawberry ripeness


  • Blend the strawberries and simple syrup until smooth in a food processor or blender.
  • Strain the strawberry mixture into a glass or jar to remove as much of the seeds as possible.
  • Pour about 2-3 tablespoons of the the strained strawberry puree into each champagne flute.
  • Top up each glass with Prosecco. 
  • Mix the puree and Prosecco together, gently to avoid breaking up the bubbles.
